If you stay close to them long enough, they'll reach the point of no return and will detonate after 1-2 seconds, which is enough time to get away from them. And Lunar Mushtrees do regrow. Just not via desolation regrowth. As in, if you chop them all, no more will spawn, but if you leave some, they will eventually create offspring during Winter.
