characters does not have any benefits and drawbacks about fishing (even Wurt, who receive same sanity regen from ocean and freshwater fish). every character requires 100500 hours to catch an ocean fish, every character's boat is slow as heck, every character regenerate the same amount of hunger, health and sanity. what can be compared here?

um.....their upsides?their downsides?

(im pretty thats obvious)

also boats can be really fast if you just make a lot of masts or kill malbatross

and fishing is meant to be more of a slow relaxing thing to do

in the real life, when you can feel weight/power/etc. of fish - yes, in a virtual reality when you just sit and burn your eyes while watching in monitor and waiting - no.

Gonna throw my opinion in here and if we're talking about fishing since the title of the topic is "Who's the best character, in your opinion, to fish in the ocean?", then none. No character has any benefits related to fishing (Wurt's tiny sanity gain from holding a fish is a bit of a stretch)

If we're talking about ocean in general, then I'm gonna say Woodie. He doesn't even need a boat. Exploring the ocean is the best with his goose form, by far, it's fast and practical, unlike the slow and clunky boats.

But if you are gonna be using the boats, then Maxwell is good for clearing the sea stacks and Wendy for gathering salt because she can easily deal with cookie cutters (and Abigail can kill a gnarwail without it drilling a hole in your boat, saving you 1 boat patch)

the things people listed above. For example Wendy, whose Abigail can easily kill any threats out there

The people who complain that fishing takes too long have either never actually done it, or don't know how to do it without losing the lure and float.
The fishing is quite speedy if you know what you're doing, and is (dare I say) just as quick and reliable as a number of other alternatives for getting meat. I say this as Wendy, having spent many winters living on spider and rabbit stew; courtesy of dear Abigail.
Abigail aside, the ocean fishing is worth the effort. The ocean itself is not worth the effort beyond the saltbox and bull kelp, but the fishing is very useful.
Everyone knows the utility of a spider farm with Abigail's assistance. Turning monster meat into eggs, etc. But if you don't farm, then seeds are completely useless. Fishing can turn seeds into even more meat. Fishing can turn rot into even more meat. By allowing, say, 1-in-10 of your monster meat to rot, you can turn that into a number of fish morsels which you can combine with the other monster meats and eggs for Surf n' Turf. With the existence of Popperfish you can even turn 4 seeds into Fish Tacos.
And all of this is ignoring the fact that once you get lures, you don't even need to bait the fishing rod ever again. One of the best floats in the game is the Hardened Rubber Bung which you are amazingly likely to get from tumbleweeds. Seriously, I have a hard time NOT forming a collection of these things.
All in all, people who complain about the ocean fishing aren't actually looking deep enough to see its utility. And I freely admit that the overwhelming majority of ocean content is a waste of resources; but the fishing is not one of those wasteful things.

As for who I think is best for sailing the sea? Abigail and I, of course. Those sea creatures could never imagine the wrath Abigail brings upon them.
