Because as far as I know, or at least have read, DST comes only with one cave system unlike DS's 3 cave systems. Best way to do this is to go the Documents/Klei/DoNotStarveTogether(ANewReignBeta)/Cluster-(saveslotnumberibelieve)/Caves and deleting the caves folder. Then after a world restart, the caves should be regenerated.
