Deleting cookbook and cookbook_prod files in C:\Users\*username*\Documents\Klei\DoNotStarveTogether\*numbers*\client_save may help, but I'm not sure - backup them before doing so.

The cookbook logs are persistent. The saved info resides on Klei's servers. Ironically, the entries from the cookbook from The Gorge were only saved locally. Your best bet is probably to ask @ScottHansen, @nome or @zarklord_klei to magically reset your cookbook progress (or request a feature for wiping account progress from e.g. the Klei Account page).

Resetting the state is not trivial for us, especially selectively filtering. I think the easiest way to handle that would be a client mod that filters the unwanted items from the cookbook.
