It can't be that it only works that way for crafting recipes, because you also can't select coal instead of bleach stone for hand sanitizers). On the stream they said its meant to just be something that is hard to dig through right now. To clean debris up or move it somewhere else. I wanted to remove some diamond from an area because they were very hot and I was trying to lower the temperature of the floor to less than 75c. I suppose my only option right now, if I was determined to clean them up, would be to temperature control it then move a hatch there to convert the diamond to coal. It is one of the most common gemstone with only relatively recent industrial applications. That they're worth a lot owes mostly to slick marketing and a cornered market monopoly. The only really valuable thing about diamonds are its ability to signify disposable wealth. In a more pragmatic sense, coal represent energy and that's the core of economies forever. And yet diamond (250 hardness) is easier to dig through than granite (80 hardness) and abyssalite (250 hardness). Go figure... Also, as of build 236679, I don't see a way to store diamonds.
