Why can't we stab a spear?

As one of the most ancient weapons used by human, spears are handy for their length, allowing our ancestors to kill a beast at a rather safe distance. Yet in game all you can do with spear is...swinging it like a club.

Why can't spears be used to stab like the fencing sword and get a little attack range boost?

That whip weapon is a bad example, considering it's lesser than spear damage and slow attack speed. We have Wanda for a better and a cool example of what a whip could be like.

Most what I'd want is spears to be thrown to agro a skittish creature.

In the game files there is a stabbing animation that's existed for a long time (used by the fencing spear now), but I'm pretty sure it was specifically not used because it's funnier that Wilson confidently thinks the way you use a spear is bonking. I could see a world where Wigfrid gets the stabbing animation since she probably does know how to use a spear. But yeah keep in mind most of the DST characters are morons.

Out of all the characters like the know-it-all librarian Wickerbottom who's memorized the scientific terms for every freaking thing ever made, the genius inventors Winona & Wagstaff, and the intelligent conman Maxwell, only the delusional method actor Wigfrid is smart enough to know what a spear is. Everyone else is just huge bumbling morons who know how to make rope by hand, know how to make a spear by hand (despite not knowing what it is), know how to weave grass into a backpack by hand, know how to make complicated clothing like top hats by hand, and intuitively learn how to make magical artifacts by hand, but they don't know what a spear is. They don't understand that the pokey bit goes into the other man. 

The “stab” animation would have to be quick and fast, to match the speed of the current attack speed, kinda like how fencing works (in real life not in this game, they move about and jab at things fast)

The animation for the fencing sword is intentionally slow because it’s not intended to be an actual good weapon. But a Spear only has one function: Weapon, so yeah it probably should be faster and more reliable?

Sadly Wigfrid tree didn't allow her to use spears properly

I think the swing is just visually more significant. The stab, especially away- or towards the camera has basically no visual impact, especially if you are zoomed out a bit.

The swing however is easy to see, has a nice visual impact, and is, as others have mentioned before, just goofy and hilarious.
