The Year of The Beefalo update changed the way Beefalo Work: Once “Bound” by a Beefalo Bell they basically become “Woby” with the exception to being a 9 slot storage box.

They will follow like Woby, go into and out caves like Woby, if they get lost somewhere they teleport back to you like Woby, and will log off the server With your character when you leave the game like Woby.

That's the first thing I thought of when replying, but I haven't tried and it sounds likely the beefalo would just get in the way, especially if you're trying to mine salt. Plus rockjaws make the whole idea of this sound too risky.

Wortox also can't soulhop on beefalo. Which makes souls only useful for healing allies or as food source.

This. Granted, a tame ornery, or normal beefalo with war saddle can take down cookie cutters in two hits.

But you can just use anything that has over 50 damage like tentacle spikes, and having to remount and dismount to control your boat/paddling around to mine/collect salt is annoying.

Generally beefalo on boat is bad idea due to you being confined in very small place, and you need to dismount to control your boats anyway, they are better for food.

but wx does not lose speed or health and you don't need to heal yourself on a beefalo and if you do just ride out of danger and heal up

Good for early game chores such as exploring, killing small/medium mobs, bad for everything else.
But if you start taming extremely early such as day 3-5, when these moments that require more from a beefalo come, it will be already fully tamed (Early Winter) so I don't see a reason to not tame them on my playthroughs.

Thanks for confirming the Beefalo Meta is real! I’m sure Klei is aware of it: that people can get one as early as Day 1 and then start taming it, it’s a relatively simple process actually:

Create Bell, find Beefalo, Bond Beefalo, as it follows you around turn to it and feed it 2 sticks every now and then, create saddle, ride Beefalo everywhere for faster collection of sticks, grass, (any other resource that doesn’t involve hitting a tree or rock) as soon as your Beefalo throws you off it’s saddle immediately fed it again 2 sticks, get back on the saddle (you will ride for a longer duration each time) Repeat this process until fully tamed.

You won’t even need a Beefalo brush or to deal with it going into heat.

Playing this game 90% of the time alone I had to come up with creative ways to deal with my problems, and one of my biggest problems has always been frequent large late game hound waves- A Beefalo will make short work of them.

As a Wendy Main I don’t have to deal with them as often, but when playing as anyone other then Wendy: I really don’t feel like running from 20+ hounds.. so the 1000hp self regenerating Beefalo Mount helps with that.
