If you're not ready to fight the giants when they appear, here's some things you can do: 

Deerclops: lead him into the swamp, and let all the terrible things there kill him for you. Make sure you stay close though, so you can grab his eye and meat after he dies.

MooseGoose: lead her to a large Beefalo herd. Since they're in mating season, they'll aggro her quickly, and if the herd is really large, you won't miss the loss of a couple of them. You can also befriend pigs to help fight her, but stay close so that you can get her meat before they do. I once had her spawn near a guardian pig set piece, and that worked out really well - they keep aggro on her, and don't eat her meat when she dies.

Dragonfly: if I can't fight her, I don't. I make sure I'm in the desert and near a wormhole around the time she should spawn. Once she does spawn, I hop in the wormhole and leave her in the desert until it's Autumn again.

Bearger: lead him on a merry trek through a heavily forested area (you might even want to prepare a dense forest yourself). He should stomp down more than enough trees to get Treeguards to spawn, and they'll fight him to the death.

 

After your first in-game year, you should have a pretty good supply of hounds teeth saved up. Find a nice big open spot and set up a field of tooth traps, and you'll never have to worry about giants again (except Dragonfly).

Or you can do my cowardly way and just run screaming into the night--but in a _prepared_ way. (I never seem to have any of the correct things prepared by the time the giants show up, or if so, not enough of them.)  One thing I do is set up a permanent secondary base, with at least (both kinds of) firepit, crockpot, fridge, fling-o-matic and a couple drying racks--enough to last you through the rest of a season.  More than once this has kinda worked out opposite to what I planned, as I was AT my back-up base when the giant showed up and then had to hope I didn't lead them back to my _main_ one, but "have more than one place to sustainably live for a while" is not a bad idea in general.

This works fairly well for the Deerclops and Dragonfly. For the Goose/Goose, I just remember where she spawned and avoid that area for the rest of the spring--I'm sure I can find the same resources elsewhere.  For the Bearger, I make sure to have a bee box before fall and carry 10 honey with me.  When he spawns, I get him to follow me at non-aggro range, then wait until we're at an isolated area and drop the honey on the ground.  This puts him to sleep in an out-of-my-way place for the rest of the season. (But make sure it's ISOLATED--in this case, pigs are not your friends!)

Sure, ya don't get the drops, but you also don't die.  I'm a pretty bad/new player, so for now, this works.  (shrug)

Deerclops: ham bat, log suit, 2-hit kite.

Goose: ham bat, log suit, 3-hit kite.

Dragonfly: 20 ashes, 14 gunpowder, mole farm to replace nitre.

Bearger: ham bat, log suit, 2-hit kite, jerky to restore sanity 2/3rds through so I don't have to worry about terrorbeaks.
