the obvious answer is yes, but the reality is even if they try their best, there will always be new ones due to updates.

Still, they've fixed some of the older ones so all things considered, they've done relatively well in this regard lately.

If the glitch or cheese is allowing me to play the game in unintended and frowned upon ways by the developers? Then yes it needs to be fixed. End of Story.

But there is a very fine line behind what is considered “cheese” & what isn’t.

Gunpowder & Bee Mines are WEAPONS found in the dedicated weapons crafting tab of the game, yet Klei continuously nerfs their effectiveness by doing things like adding gunpowder resistance.

Fixing Void Walking and getting Klaus stuck on his loot stash or pinning a boss in with spider nests and lure plants when they can effortlessly destroy DreadStone walls- Those are the things that need fixing..

But if I want to hire 6000 Merms to overkill a challenge in the game, there shouldn’t be patches that nullify that by giving a boss a ground smash that insta kills all of them.

Theres Glitches/Exploits/Cheese.

And then there’s working to craft enough Merm houses to be able to hire 6000 Merms in the first darned place.

So like I said: Fine line between what should, and what shouldn’t be fixed/Nerfed.

Use the word exploit instead of cheese because a lot of people might confuse the word cheeses with using things like gunpowder 

really don't think it would be practical to try to fix every single cheese in this game. In a game like don't stave, where you primarily play the game in a sandbox like environment and can basically engineer practically Whatever in boss arenas, there will inevitably be ways to cheese/exploit bosses, and I feel patching every single way to cheese a boss isn't fun and would also take a large amount of devtime for an otherwise mediocre payoff at best.

In addition, it's also important to consider why people cheese bosses in the first place. People cheese bee queen because she is a nightmare of a fight in solo and to a significant of players is not an enjoyable experience. By comparison, people rarely cheesed klaus even when it was possible to do that, because Klaus is a very enjoyable fight that doesn't demand an incredible amount of skill and requirements.

I personally don't mind cheese existing one way or another, especially provided the bosses in question are fun for most of the community in the first place.

I agree with your first point 

But the second is kinda weird because even exploiting glitches need some skill and knowledge of the game 

And you might disagree but to me Animation cancel deserves to be removed more then any other bug or exploit because you are literally doing more damage for free and in top of that animation cancel can make some weapons unbalanced like Walter slingshot vs the Gloomerang if u will do animation cancel the Gloomerang will do more then what the slingshot can do and that is just not fair

attack cancelling is an intended mechanic

In 2020 it was explicitly addressed by a developer and a patch was rolled out where it was nerfed a bit but the developer explicitly stated the nerf was made in such a way that people could still get a faster attack speed than default if they wanted to do so (it was capped to 0.400 while default attack speed was 0.4333-0.4666; if they had wanted to remove the dps boost altogether they could've just capped it to the latter but this was explicitly confirmed to be the intention)

inb4 people confounding "this is an intended mechanic" with "this was added to the game from the very beginning in 2014 with the explicit intention that everyone would do this 100% of the time"

Appreciate linking the post this was mentioned, since I genuinely forgot they did address this when they initially “nerfed” attack speed back in forgotten knowledge and I was curious myself where they did.

No, the lure plant cheese just gives players options on how they engage with content. Refusing to engage would be not doing Fuelweaver at all or getting other people to do it for you. 
Also, the forumite holy cow that is Ancient Fuelweaver's current content is sure to find itself in a slaughterhouse soon enough if Klei's recent comments on finding in-combat inventory management unfun are anything to go by. It's the king of stressful unfun in-combat inventory management, and I see a rework in its future. 

As for animation cancelling: I'm okay with it staying in on the condition that other glitches that allow you to beat bosses in unintended ways stay in if they're out-of-the-way enough that you won't encounter them purely by chance.
As-is, animation cancelling gets special treatment from people who know how to do it consistently because they like doing it, and that results in a skewed discourse around balance in this game because the people who animation cancel and the people who don't have vastly different experiences, but animation cancelling is treated as legitimate while other glitches aren't for no real reason. I consider it to be just as "cheese" as fighting Dragonfly with walls or using Woodie's treeguards to kill Misery Toadstool (and this isn't a bad thing from my perspective - it's all just a matter of where you invest your time). 

If Klei wants to patch every "cheese" method and every glitch, I say they should patch animation cancelling first since it affects the entire game, can be discovered by accident (though is tricky to master), and is relatively widespread. Perhaps that will change some attitudes towards "cheese". 

As long as it is something that the average player won't come across on accident (like the patched bug with nightmares not despawning), and it doesn't ruin other people's servers, I think they should stay in the game when possible. Imagine if they removed the dragonfly larvae pathfinding cheese, or all the bee queen strategies that are easy in single player. Not everything should be fixed
