Why is there a day and night shift when travelling in space?

It's actually a very good idea to simulate a normal day under these circumstances. Because psychologically that's what humans expect

Also dupes still have a need for sleep in space. Not using the established sleep schedule would be bad game design and unnecessary work

Depends where you are in space, if you are orbiting a planet, you would actually see many sunrises and sunsets in a single day (not that there is anything like orbital mechanics in ONI).

If you are traveling between planets, then there will most likely only be "day".

It looks like duplicants are just like humans, they need some sleep to function. Therefore, having a night/day shifts make sense, the duplicants need to stay on some sort of day/night cycle to function properly.

define day. user needs sleep 8 hours in one or another way, at that time he have night, do-sent matter if it sun out or not

Iirc it only affects dupes. It`s more about the schedule than actual day-night cycle. There is no "night" in space and if you could place solar collectors outside the command module they would work 100% of the time. Also the solar power module works during "nights".
