Water has to cool down past its freezing point to actually freeze, and it has to warm up above its melting point to melt. I believe the actual numbers are 5c for melting and -5c for freezing, or something close to that. Yes. Take, for example, a pot of water. Put it on the stove and turn the heat to high. It will quickly warm up to the boiling point. Then, until the entire pot of water boils away, it will remain fairly close to the boiling temperature despite the fact that the heat of your stove is still on high -- far longer than it took to warm the water up to that point. The phase change back to water from steam is far less energetic, but will still result in the area around the stove getting warmer .. and wet. So.. if you do try this at home, have some towels available. And keep them away from the hot stove. While fire is pretty, it can be very dangerous. And don't let your pot boil dry.
