Why is it only for Wilson? I know because of beard hair or is it to counter balance the fact that he has no bonuses while all other characters do?

Also what if you made a tent, made a Meat Effigy out of beard hair then switched to another? will that character respawn with the effigy or just die normally?

No beard, no Meat Effigy. However, as you suggested, Wilson's "perk" is the fact that he can grow a beard and therefore create Meat Effigy's. This works on the principle that Wilson is the game's "favored son" (mascot?) and the easiest character to play as because he can cheat death, so it's fitting that you start the game playing as him. Later characters, lacking the Meat Effigy, are harder to play, although I'm not sure there is a clear difficulty progression between Willow, Wendy, and Wolfgang.

The short answer is exactly the one provided by Solnaga. So yes, which character you are playing as benefits from any existing Meat Effigies that have been crafted. When you die that character is resurrected. Of course once the Meat Effigies are used up you will need to switch in Wilson again, grow his beard, ect.

The alternative is to find (by digging graves) or craft Amulets. However I heard they are not as effective.

Wilson is the only, who's able to build meat effigy, because he's the only scientist/alchemist and Wolfgang doesn't want to grow or cut his beard, because it's to stylish. He says an argument, why he doesn't want to cut his beard off, if you try to use the rasor, but I forgot it.

I'm not sure there is a clear difficulty progression between Willow, Wendy, and Wolfgang.

In my opinion it's Wilson-Wolfgang-Willow-Wendy, but I prefer playing Wendy, because I started to like Abigail.

The problem with amulets is, they resurrect you where you died. So, if you died because a massive horde of spiders surrounded you than you could imagine what happens.^^ After you played long enough to have enough silk for tents it is no problem to craft a few Effigies with Wilson and then switch to whatever char you like. Or you start with another character and play until you can switch to Wilson for the Effigies. So you could say: Easy Mode - Wilson, Normal Mode - Wil, Wen or Wol and then Wilson or last but not least Hard Mode - no wilson at all.

Also I'm not sure if the changing of characters ingame will be in the finished game, we will see.

Yup... that's why it's not nearly as good. It should instead fast-forward time and esurrect you at the next sunset or sunrise (save), removing all nearby enemies... well, except the tentacle(s), but then the onus is on you to run the moment you get up if you don't want it to rise up and kill you.
