Please let us know why there won't be a way to unexterminate beefalos.

It's big frustration once some greedy player exterminates them on pubs.

We can unexterminate goats and pigs but not beefs. 

I've hoped for a way to restore beefalos to constant since ever.

Maybe hunting tracks that finish in a savannah during autumn could have a chance to find a beefalo

something that should of been added during year of the beefalo, the year of the catcoon made it that hollow stump get regenerated if destroyed

Moon caller event. You can kill werepigs that spawn there and gather their pig skin for new houses.

That's tough but you have to go to ruins get materials for star caller staff, find the pseudoscience machine, make staff, use the staff on moonstone altar during fullmoon and kill werepigs that will spawn so you can get the 4 skins required for a pig house.

You can keep inserting/removing the staff during phase 1 to easily kill the werepigs and hounds that show up. Easier than trying to spawn new goat herds, imo.
