From my experience, if you spent a great deal of time in the cave then deerclops may not spawn on day 30. It feels like the game don't count the days spent in cave when trying to spawn the deerclops. Server will attempt another deerclops spawn in 3 days after a fail spawn/ despawn. I don't think any of us went down to a cave before spring except for, y'know, lanterns but that was probably done during autumn(One of the people I played with kind of is in love with lanterns).
