Mods that add items and have functional inventory art are currently replacing inventoryimages.tex, so that would be the most likely culprit (the only one I can think of is Coraline at the moment). I guess it's also possible that your inventoryimages.tex could somehow be on an earlier version? A game cache validation or reinstall should solve that.
