Does following the pirate monkeys' boat get me to their island?

Anecdotal but every pirate raid I have encountered generally came from the the monkey island direction, but they don't necessarily flee to the direction where they came from.

I would like to test this by having monkey steal my Nautopilot Beacon thus enable my boat to follow, but my Beefalo is too good at destroying the raid so monkeys never successfully escaped from me lol

I remember pirate boats were disappearing after swimming away from player's boat, idk how it's now tho

I wonder if an ocuvigul would keep the monkey boat loaded or if it would dissappear

No, the closest thing to a clue you're getting to being near the island is the Monkeys showing up in the first place.

Sadly not, Ocu's don't keep areas loaded, just the map updated. You can leave a Moonlens or other map marker on their boat to find the location of the Buried Treasure, however.
