There should be an option in the Bridge creation menu to select how long the bridge can extend. The max length should be to cross over 4 tiles. If you build pipe from "pipes", and pipe from "pipes and bridges", and enable two pumps in same time, you will see, that "pipes + bridges" deliver material much faster (and temperature exchange also smaller). I'm afraid while it is not changed, 4x length bridge would be best choose for "insulated" transfer and speed transfer (like, deliver LOX and LOH to rocket). Think best solution is get rid from bridges completely, and allow to build pipes over pipes, when you will be able to chose connect pipes, or put them over each other. So, you will be able to put vertical pipe over horizontal pipe, or make any pipes crossing.
