It would be a missed opportunity for trading to only be useful early game. There have been a lot of good suggestions on what he could sell so I won't do that.

As players continue to trade with him his stock could scale infinitely.

Some of his items could be locked until you trade enough with him. This could be percentage based and even extremely rare items can be added at a very low chance that increases as you trade with him.

I would prefer If we had hamlet pig city in the game but since we are getting a new trader why not make it worthwhile and expansive?

I understand that elastispacier was added to help with late game lag but it is only a fix that can't solve the larger problem, why do you think players gather so many items late game? A lot of them justify it by saying that they might need it, If we were able to sell it and convert it into currency that we could use to repurchase these items even at a loss there wouldn't be such a need to store everything in large amounts.

What if he went to biomes and asked for materials from that biome, and had a sampling of items based on a memory of the X last few locations he has been to (Time based not like a queue,) that way there is value to not trapping him and keeping him in your base.

That way he would sometimes say, have useful stuff after he has traveled through certain late game events.
