That's a Gourdo from the unfinished Nocturne Grove level. 

Technically, it was in the playtest, but the devs intentionally didn't hook up all the Nocturne Grove files since the level isn't complete.

With some file modifications (to get the relevant assets loaded), you could actually play the level.  You can see the Gourdo in action at the 8:14 mark of this video. Or skip to the 5:00 mark to see the mini-boss / elite (Gnarled) version.  Btw, I did ask Klei beforehand and got their permission before I recorded & uploaded gameplay of this unfinished level.

Dude I will literally do ANYTHING for you to show us how did you 'hook' these assets to load so you could play these levels
