There are 2 World Types : Hosted and Dedicated...

Hosted : by a player, if player leaves then server closes

Dedicated : on a profesional server hosting machine , cost money and runs 24/7.

IF the server is Dedicated, the server will be on no matter what. This will require money and luck. Money for the server and luck that you don't encounter trolls looking for an 0 person server. Hosted is wayyyyyy more safe in terms of your world getting griefed. The host can easily kick out anyone bad. It also means that if your friend has only an amount of time available for playing, you also have that amount of time on the server. Your server will immediately close down when the host leaves. 

In conclusion, get dedicated server if you have money AND are willing to risk entering the server only to find it griefed. Get hosted if you are afraid of griefing OR do not want to use money.

There are password and whitelist setups for THIS reason.

You don't need to get yourself a dedicated server right off the bat presumably being a beginner. You can opt for a community dedicated one (there are a lot of friendly communities out there that policies their servers well with constantly updated ban lists of known and less known-but-recurrent griefers plus moderators constantly/most of times online in said servers - check DST Server Bulletin section or appropriate DST groups in Steam) 'till you and your friend learn the ropes of this game.
