This would be great! I think the gas sensor should be an 'element' sensor, so it could be used for liquids too.

 

Also I would love an inline-temperature sensor. It would bring up some interesting setups where you could let pipe contents sit in a hydrogen cooled room until they're at the desired temperature, then let them pass.

I'd call it a chemical sensor, set to one specific chemical, turns active in response.  A means of distinguishing if the sensor should check the surrounding open air/liquid or the contents of a pipe though is tricky, avoiding the need for 3 different sensors would be good.

What about a new segment of Pipe called a 'port', only one port may be in a tile but it is otherwise a normal background pipe, any sensor placed over a port reads the pipes contents not the outside environment.  This would allow all current sensors to be reused in monitoring pipe contents, though Hydro sensors still only detect liquids and Atmo sensors only detect gas packets.
