Where do we go from here

Do any of you have any suggestions / mods that will help improve the challenge of staying alive?

Adding more monsters means adding more food inevitably, and we've done that to death so to speak. At present we're playing on Lights Out, Vegan only. And to be honest, its just impossible to starve in this game. You can literally feed 2 people on berry bushes and ice alone, continuously. Granted we spend a lot of time just harvesting and cooking jam, but we're surviving comfortably. Winter and Summer are set to random, rest is default.

We're not big on fighting, we prefer battling the elements and food supply. Where do we go from here?

May I recommend you the Eat Your Veggies! mod?

This mod restricts you to eating specific diets, forcing encouraging you to expand your horizons and venture out to look for food. The mod is very much configurable, so you can challenge yourself further by including cave foods such as Lichen and Unagi, or even rare foods such as Deerclop's Eyeball and Waffles.

Judging from the description, I thought this mod would suit your tastes =) *pun intended*

Quick question : When you chose Random, are the seasons' length randomized every year or are they set to a value during wolrdgen and stay that way forever ?

(raises hand)  Ooh!  Ooh!  I know this one!  I randomise my seasons all the time for fun.  :)  The answer is: The latter.  Although I SO wish they'd change to new amounts every year.  It'd be so much more interesting.  (But, at least it's better than how randomised seasons work in singleplayer, which is REALLY messed up and seems it'll never get tweaked.) 

From someone who also enjoys battling the elements far more than...actual battle, a hint?  Try randomising ALL the seasons.  You can end up with interesting combinations including sometimes an entire season (or more!) will just be _gone_.  Adds a bit more of that unpredictable dynamic to it (well, for the first year anyway). I've gotten everything from uber-long winters to super-short ones leading directly into _summer_, to my most cut-down world ever, which had only spring and fall. 

I like randomising the seasons in general 'cos it makes you like, pay attention to nature and try to figure it out yourself--as long as you don't have any of those cursed tell-you-everything-ahead-of-time mods!  Season Clock?  Thermal Measurer?  Pff.  Just plant a couple birch trees near camp and look at them every now and then*!  : P

*Of course, since the leaves don't actually change colour for the transition from spring to summer (just the lighting) just watch for when your character starts sweating when close to a campfire...even in the dead of night.  Uh-oh...
