That's extremely complicated in singleplayer. It is also very complicated in DST, eventhough the beefaloes there are ridable already.

EDIT: Though I reckon, if you bind the mound to the item being equipped, you could just change the players stats and play some fancy animation magic.

I don't think it would be that hard...

though you'd have to tell me what exactly this is supposed to be and how it should work.

You could have a permanent companion that will be there from start pledged to you.

Is it supposed to die? if yes are there ways to bring him back? etc...

beefalos prefab mounting config  and pigmen or spiders brain / ally system might make fitting templates for a mountable companion
