When it was first announced Beefalo riding/domestication was supposed to be a part of it but that's been implemented already. The first wave of TtA content was actually released with the resource variants! Update Dec 23, 2015 Don't Starve Together leaving Early Access! You've already seen the first link, while the second and third link are things you may have not seen or read yet. There are also a bunch of concept art pieces showcased in Rhymes With Play streams. Sadly, I wasn't able to take screenshots of them. One of them is a large frog/toad that grows mushrooms on it's back, most probably called Toadstool. Here's the exact timestamp of Rhymes With Play EP 80 skip to 50:55, if you want to see it. This would probably be another way to get mushrooms like all the other resource variants that are already implemented in game. Hopefully we'll see more in future streams, but for now I hope that will suffice. Cheers.
