What I normally do is draw the character as a whole when I'm planning it out, but I draw it to accommodate the size and proportions of the body parts of Don't Starve characters.  Afterwards, I re-draw all the pieces onto the atlas.

I usually like to try and plan a portrait for the character before I cut it up, too.  At least sketch it out.

^ Same, really get a good idea of how your character will look then translate it to the character template, also blow up the template to twice its size and then scale it back down when you're done.
