The exhaust gasses themselves seem to not actually come out heated, but rather the rocket engine has a heat gun style area active during liftoff/landing. 

I also learned that you can use this to boil liquids without the risk of contents escaping if you have a containment area surrounded by insulated tiles.

Both. Exhaust is heated, and heat gun works too. Actual heat of exhaust and power of gun depends on engine type (vanilla engines are pretty hot, some DLC ones - arent)

Like the sugar engine is surprisingly hot, though considering sugar burns are absolutely no joke.

I had already figured it could be used for steam, but it felt too obvious a use to put here. Though I wonder if there's a good way to make it so it can also refill a steam rocket?
