Beefalo question

Is there any way to pen a beefalo that's still on the taming process, without worrying it will break the walls when it's in heat? Can't leave it in the open either as my friends might accidentally stumble upon a horny beefalo.

You can either build grass wall, or just put beefalo in a boat with salt lick (so it wont loose taming progress). 
As long as the boat is not a bridge to other biome, any of your friend come to your beef while it horny deserve to die.

boat sounds like a good idea actually. Do they jump to the boat, or do i need to ride it first to get it to the boat?

You need to ride it first to the boat, since they don't jump into boats unless you're riding them (keep in mind depending how long you plan on keeping them there they might throw off their saddles)
