Horticulture books fail to add moisture to farm as intended.

You interpreted the code wrong, the code is there to ensure that plants use up appropriate amount of water from the soil hence the negative number: they don't have function that directly removes the water from the soil, instead they use function that adds the water but with negative number (meaning the water gets used up by growing plants)
