Three easy distinctions:

1) Adventure mode:
explore the game, its functions, its abilities, how things interact etc.
added content:
- discover disbanded bases with "fill to 80%-120% of expected player resources", (encourage moving out)
- maybe showing an (incomplete) way to build certain things. A sleeping room, a kitchen ... (educate with "expert" knowledge)
- etc


2) Standard mode: 
As game develops now


3) Expert mode:
I'm no expert ... but from what i've seen in forum:
- extended engineering of rooms to stay on par with game
- extended resource gathering through ... workshops
- limited choice of freedom: game options to achieve things require higher specialization of dupes. 
- etc.
