What's the different of game mode?

In endless you spawn next to a portal, and when you die you become a ghost. You can haunt the portal to revive, though there is a health cut just like using tell-tale hearts. You can fix this health cut with booster shots.

In Survival you also spawn next to a portal, but you can't use it to revive. When someone dies they become a ghost, and they cause a slow sanity drop for all the living players on the server until they revive. When everyone dies, a timer starts. If no one is revived before it runs out, the world starts anew. 

In wilderness, there is no portal. You start in a random spot on the map (not the same for anyone who joins the server). When you die, you don't become a ghost. You get taken back to the character select screen and you are spawned again in a random spot on the map, with all you explored map or unlocked recipes set back to start again.
