What is the chance for surprising seed after beta?

I opened 5 chests and got only one (4k day world) or am I just unlucky?

Content in chests is determined after reading letters. So the treasure discovered before the update should be excluded.

This is not true. It's determined upon pinch and winching it out of the ocean for the first time. In one of my first worlds where I went for treasures a lot I remember getting a treasure and then getting in trouble that day and rolling back the entire day. If I happened to roll back before I fished the chest out, I would always get different loot. I remember being excited about it when I got thulesite stuff from one of it this way (I was not doing ruins much back then so it was actually really helpful). 

At least that's how this used to work before this update. I'm not sure if they changed it in this beta, haven't played with it yet.

In beta I tested with roolback, the chests is already determined and can't be changed. It might been fixed recently or as late as klaus loot stash fix

It's been like this for some months at least, I remember trying to find stray purple gems from bishops in my world via console commands a few months back and teleporting myself right into the middle of the ocean where a sunken treasure with purple gems had been sitting there since a couple hundred days ago.

yeah the chest loot seems to be determined as soon as you read the message in the bottle. If you want to increase your odds best way is to open all 10 bottles at once, then go gettem and if you don't get enough seeds rollback to before opening the bottles.

But this process probably takes like 3 days even with spamming bootlegs, not sure how worth it it is since you should get 60%(from my experience this number seems fairly accurate) anyway and if you're gonna grind crabking it's going to even out eventually.
