Would anyone with the technical know how be willing to do/help me with this? I could handle some of it, like re-adding sanity gain on pine cones, but I have no idea how to do the more complicated parts like re-adding the beverness meter. Just figured I'd take a shot in the dark to see if anyone else had any interest or insight on this.

At this point it'd be easiest to get an old version of the game and have his and his prefabs like Lucy all copy+pasted into the mod as it was.

You can do this via Steam's depot_download command and stuff, using steamdb's depot numbers from whatever date.

I had thought about doing that, but I wasn't sure if it would be ok with Klei on an intellectual property level to just copy and paste their code.

You're not reselling the data or anything, and it's not bypassing some skin thing or whatever.  Klei put in the feature of overriding files with files of the same name from mods intentionally.  It's not the best way to go about modding if you want to futureproof your mod with Klei's updates as you'd need to update the file every time Klei edited it, and introduces mod conflicts.

But since you want it to be an old version, then the best way to do that is to just use the old version.

Just note that you may need to also use the old animation bins and such for it, since Klei changed things for the three forms and I'm not sure if the new anims changed old names/symbols/etc.  You'll need to play around with it.
