There's a Custom Sound Tutorial. It focuses on changing character voices, but the same concept can be used for just about any sound in the game. You just gotta find out the correct path to the sound you want to change, which can be difficult for find.

How do you reckon? And why would you need to change the stategraphs? Wouldn't remapping the sounds be enough if you just want to change it to a custom sound?

Overwriting a stategraph tunction just to replace the path of the sound it should play is only viable if you want to change it to play another sound that's already in the game. And even then, I think I'd still prefer to extract the sound and remap it. But then, I'm a stickler for doing things as unintrusively as possible (though I'm no expert, so I don't know the best ways to do many things).
