It's been like this for awhile now, I'm not sure how klei hasn't found out about this yet?
When you see shadow creatures/shadow items they're pitch black, no variation determined by the amount of sanity you have.
A similar bug is maxwells puppets being complete copies of the player skin, color and all.

A developer has marked this issue as fixed. This means that the issue has been addressed in the current development build and will likely be in the next update.
