Usually buildings reserve just a few orders, but rock crusher/sushi bar reserves 200 at a time.

I've seen strange reservation behavior on other buildings as well. The smoker will call to store peat even if it isn't used for any active recipes. I noticed because I was using wood, and had very limited peat I was using to farm a few corn.
