In EU I have been able to take food up to 56% stale and mark it for compost. It becomes 100% fresh.

Find stale food item. Mark it for compost. Observe that it's now 100% fresh.

A developer has marked this issue as fixed. This means that the issue has been addressed in the current development build and will likely be in the next update.
