If you place body armor on the dummy targets, it is invisible.
I've also noticed that there really isn't a way to retrieve the armor you've placed on the dummy, which isn't really a bug but more of a point of feedback (and I guess would make bone armor hard to take out unless you swap another piece of armor on top).

A developer has marked this issue as fixed. This means that the issue has been addressed in the current development build and will likely be in the next update.
