Is there a way to Make A Custom Buzzard Pet?

Hey! First, thanks for reading! Recently I have been playing around and I could some help here.
I'm creating a character that it's supposed to have an owl pet.

I thinking in something similiar to the behavior of a Buzzard:

- Roams in the sky. (You can see the shadow, usually must be flying in circles around the character).

- You can call it while its flying so you can  feed it. (Maybe a special item for it?).

- It can fight alognside you.

- It has his own Stats. (HP/Attack/Hunger).

I have seen mods with custom pets with custom artwork. I remember one with a dog replacing the hounds. So I think is possible?
Any help will be appreciated :'D
