Viewing game files

I was interested in viewing the coding / pictures / general files of Don't Starve (mainly because of curiosity) and discovered that most, if not all, of them come in the form of .Tex's or .Xml's.

The programs on the internet that I can find for viewing those two files are few and far between, and the ones I do find don't seem very trustworthy. I'd quite like to know what the best program is for viewing them, so I can edit them.

I'd like to take up modding, and it feels right to start here.
