Depends what you want to do with them, and how you want to animate them.

 

For custom animation, I start by doing a rig breakdown. A character like this, I would probably break down like so:

You will need to do Front, Back, and Side assets, as well as cycles for those views.

 

You can re-use the same assets in multiple views, in some cases, but not all.

 

Animating the character from scratch is a huge task, and I would recommend sticking to a re-skin using the template character.
