- 8 skinless, boneless chicken breast halves, cut into 1 inch cubes
- 1/2 cup honey
- 1/4 cup olive oil
- 1/3 cup soy sauce
- 1/4 tsp. ground black pepper
- 2 red bell peppers, cut into 2 inch pieces
- 2 green bell peppers, cut into 2 inch pieces
- 1 zucchini, cut into 2 inch pieces
- 2 carrots, peeled and cut into 2 inch pieces
- Skewer

1. In a large bowl, whisk together oil, honey, soy sauce, and pepper. Reserve a small amount of marinade to brush on kabobs while cooking
2. Place chicken, garlic, onions, bell peppers, zucchini and carrot into bowl, and marinate in 3/4 of marinade in the refrigerator at least 2 hours.
3. Preheat broiler (or grill for high heat).
4. Drain marinade from the chicken and vegetables, and discard. Thread chicken and vegetables onto skewers.
5. Lightly oil a baking dish (or grill grate). Place skewers in the oven, cooking for about 15 minutes, until chicken juices run clear. Frequently turn and brush with reserved marinade.
