Define and change Save File Location

I was surprised to discover that I can't edit, or choose for myself, the default location of save files. The default location is Documents\Klei(etc) but I very specifically do not want game files in Documents, where they will clutter up my OneDrive backups. Please can you add functionality to define the location for save files, mods, etc? Also relevant for those of us who run with more than a single C:\ drive.

You can simply put your default documents folder on a different drive (and do turn of that godforsaken OneDrive before it corrupts your saves/mods)

My default Docs folder is already on a different drive, and OneDrive performs a useful function for me. 99% of my other games let me define my save location. It's a big miss from Klei that they don't.
