Which one will save me more RAM in the process? If the Caves Biome on the overworld is equal or smaller in size than the caves map (Which would probably the common case), it'd be less RAM usage than having a second server, since you don't have the overhead of running a second server instance. If it ends up being bigger and/or your mods add too much complexity to the game, it might need more RAM. Keep in mind though, adding more stuff to a single server instance might affect performance. (CPU wise) I'd say the best way to find out would be to try it and see how it runs/how much RAM it uses.
