Data wiping bug

Did you get a prompt before the issue happens? Specifically the “Which save type do you want to use?” Screen?

If you get this, always choose “This Console” and never Cloud Data (The Xbox Network). Since the Xbox network may have issues with saving data, it isn’t recommended to choose that option.

I had this happen to me as well. My Xbox Series X crashed while playing the game. When I booted the game back up it asked me to choose between my Hard Drive or Cloud saves. The cloud save seemed like the safer option having a slightly larger file size. Unfortunately choosing the cloud wiped all of my save files. Luckily the Skins in this game are tied to your account so none of those were lost. 

 

I had it happen to me again recently and chose my Hard Drive instead and everything was saved. My worlds were only set back a day or so, so it wasn't a big deal.
