size of the HUD changing back to 1 after setting it to a different number in offline mode with two players.

I have exactly the same problem. Yesterday I bought the game from the nintendo store and I have not been able to play it, since the HUD panels look very small on television and on the switch. When I try to change the size in the configuration menu, I can't get it to change from size 1. I see that this problem has been around for a long time, I don't understand how it still hasn't been solved, since it's blocking me to play, because I can't see nothing to have everything such a small size.
