When you're able to create a new blueprint, after making a selection I was able to restart the game completely and load back into the day I could choose a blueprint and have a whole new selection.
I don't know if this works if you restart while the selection screen is open or if you return to the menu.
Steps to Reproduce
From a day a new blueprint selection is made, make a choice then restart the game. Then load back to the start of the same day and the selections are all different.
