This one is a bit weird. If a fight is initiated after night starts (and after the beefalo starts sleeping?), when the beef subsequently dies and is later revived by beefalo gloom bell, it will start falling asleep, and stay that way. Here is a demonstration, with default tendency in WARBOT fight:
If the beefalo still has enough obedience to let players mount, players can then ride it, and the beefalo continues to behave normally. This first scenario doesn't really matter so far.
Let's consider the second scenario, when the beef's obedience is too low to let players mount, typically ornery tendency or simply undomesticated. In normal circumstances, when players try to mount their sleeping beefalo in this case, it will wake up, and then let players feed it or protest if players keep trying to mount. In this case, however, the beefalo will keep sleeping if players try the same action.

Thankfully, this bug can be circumvented by reloading the world, player relogging with their beef bell, changing shard, attacking their own beef or letting other mobs do so...
1. Start a fight at night, after the beefalo already lies down and sleeps. Mount the beef and fight normally, and then let the beef die
2. Revive the beef with beefalo gloom bell. It should immediately lie down and starts sleeping, no matter the time of day.
3. The beefalo will stay sleeping, and won't wake up when it is daytime or when its owner gets far from it. Players can still mount it normally if it has enough obedience, whereas if not, then they will fail to wake up the beef that way.
