water and heat (seperately) - is it just me?

Two things i find frustrating, though fairly minor -

1.  Is there some reason hot air doesn't appreciably "rise"?  The place clearly has gravity.

2.  Fluid displacement only seems to work in lowering water, not raising it - in other words, I can dig the sides and bottom out of a water hole and the level of the water will drop, but I don't see much if any change when I build inside the walls (essentially the closest thing I can get to throwing rocks in the bottom) to try and make the water level higher.  Isn't that a thing?

For the second, I think it is because if you build in water right now it destroys the water you are building in.  So you will not see a rise because you are not squeezing the same amount of water into a smaller space, you are just removing the water that was previously in the space you built on.
