They are drying out of nowhere. I planted them in the dry season and soon fertilized them, at the beginning of the mild season they were all dry.

I think this is as intended. Coffee plants are reversed in their withering/rejuvenating pattern from other plants. 
Most plants wither in the dry season and rejuvenate after that. Coffee plants rejuvenate in the dry season and wither after that.

So they are really only rejuvenated for 1 season. 

Let me know if I'm  misunderstanding  the problem
