You mean the no-eyed deer? Those are just a part of the game

They spawn in autumn and then sometime after they grow antlers , repopulate ( like before except the antlers ) if you kill / or they run into trees when they have antlers they drop antlers and meat 

 

 

Antler is used to spawn klaus at his huge sack

Hover the antler on it , click and boom you have a trouble.

 

The winter variant doesn't exist - I am sure you meant gem deer which spawn with Klaus. ( I have the icon for gem deer on my profile just the fur should be white )

I know, but I thought Klaus was a special xmas boss. I didnt know that was possible to see them before. Thx for the reply!
